The Stewarding Assistant Manager supports the Stewarding Manager in overseeing the daily operations of the Stewarding Department. This role ensures the highest standards of cleanliness, sanitation, organization, and operational efficiency across all kitchens, stewarding areas, and back-of-house facilities.
The Assistant Manager helps supervise and develop the stewarding team, monitors the proper use and maintenance of equipment, supports inventory control, and assists in managing labor and operating expenses while ensuring compliance with hotel standards and health regulations.
What you will do
- Assist in selecting, training, evaluating, motivating, coaching, and disciplining Stewarding employees to ensure established cultural and service standards are consistently maintained.
- Supervise the cleanliness, sanitation, and organization of all kitchens, storage areas, employee dining facilities, waste management areas, carts, tables, and stewarding equipment through regular inspections and adherence to cleaning schedules.
- Support the Stewarding Manager in controlling labor and operating expenses through effective scheduling, inventory monitoring, and responsible purchasing practices.
- Monitor the proper use, care, security, and routine maintenance of all machinery and equipment within the Stewarding Department, reporting maintenance needs as required.
- Assist in maintaining adequate inventory levels of china, glassware, silverware, cleaning supplies, and stewarding equipment to support daily operations and special events.
- Coordinate and communicate with employees, chefs, restaurant managers, and other departments to ensure operational requirements are met efficiently and effectively.
- Supervise stewarding operations during shifts, ensuring adequate staffing levels and prompt support to restaurants, banquets, bars, and culinary operations.
- Ensure compliance with all health, safety, sanitation, and food handling regulations, as well as Four Seasons policies and standards.
- Support departmental administrative tasks, including payroll review, scheduling, training records, inventory documentation, and operational reporting.
- Act as the Stewarding Manager in their absence, ensuring continuity of operations and service standards. What you bring
Experience
Minimum 2 years of experience in stewarding operations, with at least 1 year in a supervisory position, preferably within a luxury hotel, resort, or high-volume food and beverage operation.
Skills and Abilities
- Solid understanding of hygiene, sanitation, and food safety practices in accordance with local and international regulations.
- Strong interpersonal and communication skills with the ability to collaborate effectively across departments.
- Knowledge of commercial dishwashing systems, kitchen cleaning equipment, and stewarding operations.
- Experience supporting banquet, restaurant, bar, and kitchen operations.
- Proven ability to supervise, motivate, and develop diverse teams in a fast-paced environment.
- Strong organizational and time-management skills with excellent attention to detail.
- Ability to prioritize tasks, solve operational challenges, and make sound decisions under pressure.
- Proficiency in inventory control, scheduling, and basic administrative functions.
- Demonstrated leadership potential with a hands-on and service-oriented approach.
