Company Description
We're looking for a Bar Manager with high energy, personal charm and natural leadership skills to join our team at Lotti's. These are exciting times to join Lotti's, as we are about to finish a full refurbishment of the Bar & Lounge, so you'll play a key role in shaping the next chapter of our neighbourhood venue. Reporting to the Director of F&B, you'll lead the daytime coffee and pastry & evening cocktail bar operations, providing highly efficient and engaging guest service. You will be the driving force behind the evolution of our new product offer, taking ownership of its identity, creativity and development. You won't be doing that alone; you'll lead and recruit a team to support you and work closely together with other departments in the hotel to ensure a great experience for all our guests.
Lotti's is a buzzing neighbourhood lobby, bar and restaurant which has been the local "Living room of the Herengracht" for more than 11 years. The experience changes throughout the day. In the morning, Lotti's is a casual neighbourhood café, offering coffee, freshly made pastries and a relaxed environment where guests can meet, work or simply enjoy their day. As the day progresses, the energy builds, with local DJ talent and jazz bands taking over from Friday to Sunday, transforming Lotti's into a signature cocktail bar and vibrant neighbourhood destination in the evening, with a strong focus on music, hospitality and memorable guest experiences.
As part of Lotti's refurbishment and relaunch, you'll work closely with the Director of F&B and the wider team to bring our renewed concept to life, one with a distinctive Latino influence, neighbourhood spirit and relaxed Amsterdam character, evolving into a space that feels authentic, welcoming and connected to its local community.

The hotel houses 111 rooms, The Apartment (our meetings & events concept) and our all-day restaurant & bar; Lotti’s. The Hoxton is a series of open-house hotels, each in a neighbourhood that we love. Ever since we opened our first hotel in Shoreditch, we’ve never just been about offering a bed for the night. We are keen to be more than that: providing a place where guests can hang out alongside the locals and submerse themselves in a neighbourhood with vibrant, welcoming public spaces.
What you'll do
- Recruit, lead, train and motivate the daytime lobby and evening bar team in delivering pro-active guest service, helping each person to improve their skills and support them for career development.
- Enhance guest satisfaction: your number 1 priority - every hour, every day.
- Lead by example for the team to promptly approach and warmly welcome every guest tirelessly into our ‘living room’.
- A pragmatic daily focus on sales: average spend per guest and table turns. Drive sales and maximise profits by pro-active service and guest interaction: advice & entice guests to try new things, stay longer and come back.
- Coordinate stock rotations and inventory: daily, weekly, monthly – to ensure all items on the menu are always available to guests.
- Maintain high standards of quality control, processes and hygiene. Be in the details, so that each service and product delivery is of high and consistent quality.
- Ensure that all equipment and working enviroment is in working order to ensure smooth and efficient operations.
- Lead the development of daytime menus and new signature cocktail programmes, in collaboration with the bar team and with suppliers - encouraging creativity, innovation and team ownership.
- Coordinate international pop-ups, guest shifts, brand activations and collaborations, working with internal teams and external partners to deliver high-profile activations and strengthen the venue’s profile.
